Happy Happenings

What happy moments are going on in your life lately? I like sharing mine from time to time. Here are some of them…

I am having a hard time believing how big my little baby is getting. He is becoming a little boy, and it’s happening toooo fast! He loves the park–loves to explore, swing, and get dirty. He’s ALL boy for sure!

Being ALL boy means getting hurt every now and then. This was his first scraped knee. I think I took it harder than he did. He’s a tough little guy!

Do you see that piece of fruit?! ? This is the nectarine tree my hubby bought me for our first wedding anniversary almost two years ago. It has started producing fruit, and it’s actually quite tasty. Little Mr. loves it too!

Speaking of tasty things, I made some Paleo chocolate chip cookies the other night, and they were AMAZING!! I’ll be making them again soon. I just need to go buy some more almond flour…

Another tasty dish that makes me happy is bison burgers with sweet potato fries. MMM MMM!

Look at this dirty little stinker! We took him to the beach again, and he loved it. This time he enjoyed the water too. He walked down to it all by himself and didn’t get afraid of it like the time before. I’m a happy momma! Can’t wait to take him again. Maybe tomorrow!

I’m back at it! Working out 3-4 times a week. I’m slowly starting to build up a routine and keep my focus. I always feel better when I work out regularly which is the number one reason I do it. Secondly, I would like to build some muscle and be in the best shape I can be. I’ll have to post my routine soon so you can join me! You in? šŸ˜‰

These eggs make me happy too. I love eggs, especially organic, farm fresh eggs. These eggs were given to me by a coworker in exchange for working one of his Saturday shifts. Aren’t they pretty? I wish I had some chickens!

These are some of the happy happenings in my life right now. In between the work and stress of life, I try to find and focus on the happy times. What kind of happy things are going on in your life? I’d love to hear about them!

Savory BLT Breakfast

I made this breakfast for myself and my husband last weekend. It was a great alternative to the basic bacon and egg breakfast that we often eat. It was savory and hearty with lots of flavor. Here’s what you’ll need for it:

Ingredients:

6 slices of bacon

2 cups of baby spinach

1/2 cup of cherry tomatoes, halved

4 large eggs

1 avocado, sliced

Directions:

1. Heat a large skillet and add the bacon. Set aside a couple of tablespoons of the oil from the pan to use to fry the eggs.

2. Fry the eggs in a separate pan using the oil from the cooked bacon.

3. Meanwhile, add the spinach and tomatoes to the bacon and cook for a few minutes until spinach is wilted.

4. Plate the eggs. Top with the bacon, spinach, tomatoes and avocado slices.

5. Enjoy!

Happy Happenings and a 4th of July Recap

How was your holiday yesterday? Ours was nice. We hung out with family and went to the pool for a bit. I tried out a new recipe for a Paleo coconut cream pie. I added berries to make it festive. It was pretty good even though I totally forgot to make the whipped cream topping. Whoopsies! Haha. Oh well,maybe next time I will add that layer instead of the berries. šŸ˜‰ Here’s the recipe if you want to try it. It was pretty easy to make and tasted great! The only thing I regret is only getting one piece.

This is what happened after our long day away from home. Little Mr. didn’t want to nap at his Auntie’s house, so he passed out on the way home. He’s so cute when he’s sleeping!

Here’s another yummy recipe that I recently tried. It’s called the BLT breakfast. It was a nice rendition to the traditional bacon and eggs breakfast.

Ahh, it’s time to relax and enjoy the weekend. It was great having yesterday off, but I was thinking it was Monday all day today. My days are all mixed up! So glad to have a couple more days off to unwind. Ā Cheers to the weekend!

What I Ate-A Week’s Worth of Healthy Dinners

Last week was a tough week for me. The days were long, daunting, and stressful. Little Mr. woke up 2-3 times each night (teething is no fun for anyone!) and work was nightmarish. Through the stressful week, I found therapy in cooking. I cooked dinner every night this week (and Hubby helped most nights). I found most of the recipes online at Paleo Plan. I do not eat a strictly Paleo diet, but I’d say I am “practically Paleo”. The exceptions are that I eat rice, beans, and gluten free bread on occasion. I do enjoy Paleo recipes, and I found many yummy ones on this site. Here’s the meals I made this past week:

Monday:Ā Mediterranean Chicken with Artichoke Quinoa Salad

My favorite of all these meals were the Cilantro Turkey Burgers. They were very flavorful and juicy. We will definitely be adding this meal to our arsenal. Mediterranean Chicken Recipe

We have cooked Mediterranean Chicken twice now, and we loveĀ it! It has lots of fresh flavors that work well together. It is simple and there are only a few ingredients needed, so if you’re short on time, this is a perfect healthy and quick meal that can be prepared in about half an hour. We enjoyed it with a side of Artichoke Quinoa Salad. So good!

Here’s what you’ll need:

Ingredients:

4 boneless, skinless chicken breasts

olive oil

sea salt and pepper, to taste

1/2 cup cherry tomatoes, halved

20 Kalamata olives, pitted and halved

3 tablespoons capers

Mediterranean Chicken-Capers, Tomatoes, Kalamata Olives

Directions:

1. Rub olive oil on both sides of each chicken breast and season with sea salt and pepper. Grill for about 6 minutes on each side.

2. In a medium sized bowl, combine 2 tsp. olive oil, tomatoes, olives and capers.

3. Plate the chicken breasts and spoon the tomato mixture over the chicken.

4. Enjoy!

Paleo Chocolate Cupcakes

Chocolate Paleo Cupcakes

With my little man’s first birthday right around the corner, the cake question has come up many times. What type of cake do we want to have? Do we even want to introduce him to cake at such a young age? I have been a little hesitant to introduce him to sugar so early, not to mention all of the other additives in a store bought cake or cake mix. So, I have been searching around online for a couple of weeks looking for a “healthy” (Yes, I know cake is not healthy.) alternative. I wanted to find something with minimal ingredients that tasted good. I searched for a Paleo recipe knowing that it would be dairy free and gluten-free for our dietary needs. Baking Paleo and gluten-free can be a bit challenging and doesn’t always turn out the way it is intended, so I thought it would be a good idea to give this recipe a try before the day of the party. I tried them out on Sunday, and they were pretty darn good. The family came over and helped taste test them. My brother-in-law said they tasted like German chocolate cake. This was probably from the coconut oil that I used to make the frosting. I’m sure you are dying to know the recipe, so here ya go…

Ingredients for the cupcakes:

1/4 cup coconut flour

1/4 cup unsweetened cacoa powder

1/4 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup 100% pure maple syrup

3 eggs, room temperature

Directions:

1. Preheat the oven to 350 degrees.

2. Mix the dry ingredients in a large bowl.

3. Beat the eggs in a medium bowl. Add the maple syrup to the eggs and mix well.

4. Add the wet ingredients to the dry ingredients and mix well with a hand or standing mixer.

5. Fill 8 cupcake liners to the half-way mark.

6. Bake for 20 minutes.

7. Cool thoroughly before frosting.

Chocolate Paleo Cupcakes

Ingredients for the frosting:

4 tablespoons of butter

4 tablespoons of coconut oil (solid)

5 tablespoons of maple syrup

4 tablespoons unsweetened cacoa powder

coconut flakes (optional)

Directions

1. Mix all ingredients together for 2-3 minutes until well combined.

2. Store in refrigerator until ready for use.

3. Frost cupcakes and enjoy.

*Note: The coconut oil has a melting point of 76 degrees. It is important that you mix it when it is solid and store the frosting and frosted cupcakes in the refrigerator to avoid melting.

Making Friends Through Online Social Networking

I want to share my most recent adventure with you. Yesterday, I went to visit the Challenge Loop headquarters.Ā Ā Challenge Loop is an iPhone app. that let’s you join fun challenges and share your progress with pictures, comments, and/or videos. Challenge Loop was a creation that was incubated within the company called IDEA. IDEA isĀ the leading resource for health and fitness professionals and isĀ based in San Diego.Ā To learn more aboutĀ Challenge Loop, read my first post about themĀ here.

Lucky for me, IDEA is not too far from where I live. It only took me about half an hour to get there and a little longer to get home (gotta love San Diego traffic!). I met up with Kelli, the social media/web products manager of IDEA. She showed me around the building, introduced me to a few of her co-workers, and we went out for some lunch. It was Foodtruck Friday, and it was my very 1st food truck dining experience. It was so cool! We hung out on the grass, enjoyed the sunshine, chatted about online social media, and ate our lunch. We both ordered chicken salads from the Paleo food truck. It was very tasty!

I am so excited that I made some new friends through blogging and got to see a little “behind the scenes” action of an awesome local company. I will be hosting a challenge on Challenge LoopĀ soon, so stay tuned!
